The holidays are coming and that gives us all an excuse to indulge in some sweets and treats! If you’re looking for a snack with some nutritional value, look no further! Try out this amazing protein peanut butter chocolate chip cookies recipe.
Serves about 24 cookies per batch
1/2 cup butter, softened
1/2 cup peanut butter
1 cup packed brown sugar
1/2 cup sugar (may use Splenda)
1 teaspoon vanilla extract
1/3 cup milk
1 cup oats (may substitute with 1 1/2 cups flour)
1 cup powdered protein supplement (needs to be heat stable)
1 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups semisweet chocolate chips (or as desired)
Preheat oven to 350 degrees F
In large bowl, mix butter, peanut butter, brown sugar, and white sugar (Splenda)
Beat in the eggs, one at a time
Stir in vanilla and milk
In a separate bowl, mix oats, protein powder, baking soda, and salt. Once mixed, stir into other bowl.
Add chocolate chips
Drop dough with tablespoon onto ungreased cookie sheet (texture may be thin, leave enough room for cookies to spread out)
Bake for 10-12 minutes in preheated oven
Allow cookies to cool for 5 minutes before removing from pan
